Italian Spaghetti and Meatballs (serves 6)
For The Sauce:
2 Tablespoons Olive Oil
2 Cloves of Garlic, Minced
1 Small Onion, Chopped Fine
1 Stalk of Celery, Finely Chopped
2 or 3 Small Pieces of Meat (Lamb, Beef, or Chicken)
Salt & Pepper
1/4 Cup Chopped Basil
1/2 Tablespoon Dried Oregano
1/2 Tablespoon Dried Thyme
1/4 Cup Chopped Fresh Parsley
Dash of Red Pepper Flakes (Optional)
2 (6oz) Cans Tomato Paste
1 Large Can Pureed Tomatoes ( I use 1 (26oz) box Pomi Tomatoes)
About 5 Cups water
3 Tablespoons Grated Parmesan Cheese
1 Pound Of Spaghetti or Pasta of Choice
Brown the meat pieces in the oil until well browned. Add the garlic, onion, and celery and sautй until tender. Add the paste, tomatoes, water and herbs, and bring to a boil. Season with salt and pepper to your own personal taste. Turn mixture down to a simmer, then drop the prepared meatballs into the sauce. Do not stir for the first 15 minutes or so until the meatballs begin to firm up.
Continue to cook for 2-3 hours, stirring occasionally, and adding extra water as needed if the sauce becomes too thick. This sauce, with or without the meatballs can now be used over your pasta of choice. Just before serving, stir the 3 tablespoons of grated cheese into the sauce. Though most people would choose spaghetti, personally I prefer rigatoni or penne. Serve over pasta cooked al dente, and offer a little more parmesan cheese at the table. With the addition of a nice mixed salad and some crusty Italian bread, this pasta dish would easily make a complete meal. I would choose a robust Chianti wine to accompany this meal.
Meatballs:
1 lb. Ground Beef (450gr)
1/2 lb. Ground Lamb or Veal or Turkey (or Combination of 2) (225gr)
Salt & Pepper
1 or 2 Cloves Garlic, Minced
2 Tablespoons Fresh Chopped Parsley
2 Tablespoons Grated Parmesan Cheese
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water
Add the bread crums to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

Quyida seldereydan tayyorlangan parhezda bulganlarga muljallangan, ayni vaqtda juda mazali bulgan taom recpetini keltiraman.
Bu taomda selderey achchiq ta'mi va utkir hidini yuqotib , xushxur taomga aylanadi.

Необходимо:
1 большой пучок селдерея ( 5-6 стебелей),
соль по вкусу,
кусок ржаного хлеба ( замочить в молоке и выжать),
500 гр постного говяжего фарша,
3 яйца,
1/2 пучка петрушки ( мелко порезать),
перец,
1 стакан муки,
1 чеснок ( мелко порезать),
1/2 стакана мелко порезанного помидора.
Отделите стебли сельдерея. Нарежьте на 30 части длиной в 5 см. Положите в кастрюлю , посыпьте солью и налейте воды чтобы покрыло. Дать закипеть , закрыть крышкой и готовить в течении 30 мин. Воду слить , дать остыть.
В другой посуде перемешать фарш , хлеб, 1 яйцо, петрушку , 1 ч. л соль, перец по вкусу.Все перемешать. Разделить на 15 маленькие шарики.
Поместить каждый шарик между двумя частьями сельдерея и прижать так чтобы они скрепились. Каждый фаршированный селдерей обвалять в 1/2 стакана муки о отложить в сторону.
Взбейте остальные яйца , добавив шепотку соли.Разогреть масло. Обмакнуть каждый сельдерей в яйце, обвалять в муке и жарить с обеих сторон до золотистого цвета. В другую посуду положите чеснок, помидоры, петрушку , немного соли перца.Добавьте фаршированный сельдерей.
Убавить огонь и готовить 30 мин под закрытой крышкой.

While vegetables cooking u can start cook the rice, Rice must be boiled. just put rice to boiled water with salt. must be plain rice without any seasoning. ok everything ready, rice, vegatables and chicken, cut the cucmbers, slice them, in plate first in one half of the plate put rice, to another chicken breast, on the top of chicken breast cooked vegetables. on the Sliced cucumbers drop some vinigar. and put near rice . on the vegetables can add some fresh greens (rayhon yoki jambul, green onion etc)
and its ready ,
last time i cooked for my girl friend, on the table put some candls, dressed up very good, get some red wine, flowers for her and of course i cooked Chiken Scaliana, was great

"Bruschetta Pomadoro"
I got some Italian recipies as well. Me, personally, like cookin, but I like cooking fast. So the meal is ready in about 30-40 mins top.
First thing i wanna share is couple appatizers that I like, and anyone can make them. "Bruschetta Pomadoro", Easy to make, and a good quick snack for your guests, before the meal is ready.
First you take 3-4 good riped tomatoes (better romano tomatoes, long ones, not round ones), chop them into small cubes like 8mm by 8 mm. Then chop or mince some fresh garlic ( about 5-6 cloves). Chop some basil leaves, and put all the ingridients in bowl and mix them. Pour some extra virgin olive oil on top, salt and pepper it. Also you can add some fresh "Buffalo mozzarella" cheese if you would like, chop it the same way and add in to the bowl. Mix it.
It needs to seat together for about 10-15 mins, so all flavours come together.
By that time , take some italian bread and make crostinies, bruschettas ( don't remember if the spelling is right ). Slice the bread in 1 cm thick slices, put some garlic and oil on it, and bake it for about 2-3 mins ( don't burn it). After the crostinies are ready, make a nice set up with some greens in between or roasted red peppers, put slices of bruschetta around on a plate and then put 1tbsp of pomadoro mix on each bruschetta. Serve immedeately.

"Classic Alfredo" sauce
Ingredients: Serves 1 person.
Extravergine olive oil (50 ml),
2-3 fresh garlic cloves, half a cup of white wine (100ml) or some thick reduced sherry- it is very sweet cooking wine( different parts of Italy use different wine, I prefer sherry myself),
2,5-3 cups of heavy cream ( about 300-400 ml), 2-3 tbsp of graded parmesan cheese,
4-5 cubes of butter( 30 gr).
Some cooked off pasta (preferably fettucine pasta)
Heat your pan, but don't overheat it, coz extravergine olive oil looses its taste and aroma if overheated. Put some minced fresh garlic, cook till it's golden brown. Pour some wine in it, but take the pan off the stove ot just simply turn the flame off, coz you might have a lil fire :) because of the alcohol in the wine. turn the heat back and alcohol will burn itself and just leaves you that sweet grape flavour. When wine comes to boil add heavy cream and wait till it's boiled and cream starts rising in your pan. After add some parm cheese and stir it constantly for about 2-3 mins, so the cheese won't come together in to the cheese balls. Add some butter to it. Salt pepper it according to your taste. Your souce should have turn thick. If it is not thick enough, add more parm cheese to it, to make it thicker. Finally toss some pasta in it. Serve in a bowl immedeately.
You can add shrimp or chicken to it, if you like :)

Они утверждают, что, по результатам проведенных ими исследований, увеличение температуры приготовления пиццы с 200 градусов по Цельсию до 290 и времени с семи минут до 14 увеличивает в ней количество антиоксидантов до 82%.
"Антиоксиданты очень благоприятно влияют на организм человека, так как они защищают важные биологические молекулы, в частности молекулы ДНК, липиды и энзимы от свободных радикалов кислорода", - поясняет Люси Ю, профессор университета Мэрилэнда.
Она отметила, что имеет в виду не только пиццу: "Пицца просто стала примером того, что можно найти решение, позволяющее нам выделить в большинстве продуктов полезные качества, а также увеличить их пользу для человеческого организма".
