As you know we, Uzbeks, drink tea in huge amounts. I am one of those heavy tea-drinkers who appreciate brewing and drinking aromatic tea.
So those who loves tea, please post your experience, tips and suggestions on how to choose, brew, and drink lovely tea...

The Top Ten Reasons Your Tea Didn't Turn Out Green brewing green tea


1. You brewed it too hot. If you brew it too hot, it will become bitter. This is probably the most common of all mistakes, and one which has the most influence over the taste. Depending of the variety of green tea, it should be brewed around 175 degrees F, give or take 5 degrees.


2. You started off with old green tea. Green tea, "when properly packaged", has a shelf life of about 6 months. Once opened, you have about 2-3 months to use it. That's for properly packaged (vacuum packed or nitrogen packaged) tea - If your green tea wasn't packaged properly and is exposed to any amount of air, it probably was never good to begin with.


3. Your green tea was from a late harvest. It's no big secret - the best green tea comes from the first harvest in late April, early May. You can get this throughout the year, however.


4. You brewed it too long. This depends on the variety, but generally speaking, no more than 2 minutes.


5. You used too much tea. This is where you have more room for adjustment. Again, it depends on the variety, but for normal sencha, about one teaspoon to 8-10 ounces of water. For one type of tea, you may have to use an even level teaspoon, and for another a heaping teaspoon; it will vary from tea to tea.


6. You didn't use enough tea. For gyokuro, you won't get good results unless you use double the amount used for sencha.


7. You didn't start out with good water.You need good water.


8. You tried to use a tea ball or paper filter. Green tea is compact. Once you brew, it really expands and needs plenty of space to open up.


9. You tried to use a 2 liter English Teapot. If you really know what you are doing, it is possible to use a Western teapot to brew green tea. However, you would be way better off using one designed for green tea.


10. You started of with low quality tea. Even in Japan, the quality levels of green tea vary considerably. Just because it's from Japan doesn't necessarily mean it's good.

You should talk to my mom. She is a fan. Buys all those different teas. :lol: She knows all good tea shops in Vienna. :rolleyes:

I have found my tea-mate now:D Vienna is big for coffee, rather than tea. But pls ask your mum for names of those shops:bounce:
Hopefully, i will finish with my tea stash till then. I'm depleting oolong tea, as we speak:uups:

My mom could open a shop with her tea collection. I did not see it for a long time though coz she probably put them somewhere else.:rolleyes:

I am sure she will bring more now from Vienna.

Her favourite though is called White Arabian Nights, I think....

i don't know the english name sorry but in turkish it is ihlamur maybe it is similar in uzbekcha.

She may give it away, because some tea lose freshness after several months...

There is this one called "Weisser Tee Lemon-Vanille" Amazingggg aromaaa


Haven't drunk it, but those aromatic tea are usually artificially scented. So when you make tea of it, the taste is not good as the smell. They are designed to shout "buy me":D

I have a few, it depends on the mood and what I am doing. At work, I make red bush tea a lot, and sometimes camomile with spearmint. At home, after a heavy meal the favourite is green powder tea with lots of fresh mint plus sugar (so-called Moroccan tea). It's great for digestion and goes well with Algerian desserts, which I love:uups: On weekend mornings, when your head is useless earl grey with lemon is best...

And most importantly, never ever use tea bags if you want to drink decent tea...

I do not know what she did with her teas. She knows better. I am not the fan.

If you want desserts the best, go to Oberlaa on the 1st district on the street of the Ambassador Hotel and Europa Hotel. Back street of Kartner Strasse. I really like it there. I mean most people like their cakes. Ehh...they good food too.

I knew more about Turkish coffee, brewed on sand. But Turkish tea that they serve in Turkish restaurants reminds me of tea usually preferred by people form the Gulf. Just another note on Turkish tea, you need to be carefull and refrain from buying older Turkish tea because there was a huge radiation problem after Chernobil...

Great thread, more useful than most on this forum. I've subscribed to it :) Will be checking the thread for nice suggestions.

I am also a big tea lover. If I am home, I have 3-4 cups of tea (and I am talking about mugs, not piyola) after each meal. I LOOOVE telling someone younger than myself: "Bor, choy damlab kelgin" :) Birovga choy damlatishning ham gashti boshqach-da :)

But as far as these "troubleshooting" tips are concerned, I can say that either I don't know green tea or they are talking about different type of tea. Because when I make green tea, the color is yellow, not green? :rolleyes:

But keep the teamaking tips coming...

BTW, Turkish tea glasses are tiny because that tea, brewed for many minutes, would be too strong to drink in mugs.

I don't like these tiny (ince belli, balik etli :D ) Turkish tea cups. They are too small for me. Plus, when the tea is hot, the glass is also too hot to hold.

There are different types of green tea and also different origins of green tea. The best green tea imo is from Japan, but it can be very costy. BUt some Chinese green tea can be equally good.

I disagree with your reasoning. Because with Turkish tea, you have two pots, one for the brewed tea, the other for hot water. So you can always adjust the strength of the tea. When I had tea with my Turkish friends, when someone wanted stronger tea, he would say: Dam it! (anlayan anladi :D )

I think Turkish glasses are small, because they prefer to have their tea hot.

I had real Green Japanese Tea once. This Japanese lady came to our class ( I think I was in the 5th grade) and she made traditional green tea. Not your ordinary tea with boiled water. People who know, understand what I meant.

In Arabic countries they actually use same tea cups.don't they? I'm not sure but in here every Arabic restoran i go to they have same tea cups:rolleyes:

I have been couple of times in Chines tea house. The place where this tea ceremony takes place and they do soo many different types of tea.Its just amazing how jasmine opens in your tea. But i have to say not all of them taste good. ( some of them were awfully yak)

Some chines tea actually cost too much.

Arabs from Gulf countries use similar tea glasses sometimes. I like tea by Saudis, they add cardamon to tea, perfect for winter!

Green tea with Jasmine is a great combination, it's most popular chinese tea imo.
As for "yak" teas, some Chinese teas are normally disliked at first, but after you are used to the taste you get addicted to it:D For example, "pouar" tea, very rare and expensive, is like that...

ceremony left aside, it's interesting what kind of tead people are drinking.

everyone says green tea is healthy. but actually black tea wakes you up and gives you wings. recently i found Emperor's tea, a kind of black tea mixed with various fruit pieces (lemon, pineapple, other tropical) - pleasant.

sencha is good too, refreshing.

The best is cold black tea...bonkadan maza qilib ichaman. :lol:

Choy ichishda qalin piyola yoki kurujkalarni ishlatmang. Aytsam ishonmasligingiz mumkin, lekin qalin sopol krujka ichida choyning mazasi o'zgaradi. Eng optimal variant: sifatli, yengil, nozik chinni piyola/chashka yoki ingichka nozik shisha stakanchada choy ichish.



Juda tugri. Ayniqsa "odnorazoviy" (qogozdan, "kupik" styrofoamdan tayyorlangan) idishlarda choy bemaza bulib qoladi. Buni birinchi marta domlam aytgan edi, etibor bersam rostdan ham shunday ekan.

Me and my roommate both have real large size cups, and always argue with our turkish brother why they have so small glasses for tea. They are good for decoration :D , but my preference is still with big cups.

Yani luboy choyni qogoz karopkasi ichida zar qogozga oralgan boladi, hatto kiloli sotiladigan chiylarni qopini ichidan osha zar qopga solingan boladi.

Choy damlash xaqiqatdan ham san'at, osha san'atni yuqori darajada o'zlashtirsangiz doim mehmonlaringiz va yaqinlaringizdan tahsinlar olasiz.

Avvalgi postimda hushboy choy damlash sirlari bilan o'rtoqlashgan edim. Odamga xushkayfiyat bagishlaydigan xushboy choy ichish uchun nafaqat choyni togri damlash, balki uni togri saqlashni bilish kerak. Shuning uchun bu postimda sifatli quruq choydagi xushboylikni va efir moylarini qanday saqlab qolish mumkinligini o'rgataman.


Xushbo'y, chiroyli tusli, issiq, orombaxsh choy ichayotganda, bizga lazzat bagishlaydigan narsa choy mazasidan ko'ra ko'proq uning hidi ekanligini ko'pchilik bilmasa kerak. Inson hidni sezish organi mazani sezish organlaridan ko'ra yaxshiroq rivojlangan. Shuning uchu choyni "mazasi'ni ko'rayotganda, aslida biz uni xidiga nisbatan baho beramiz, choydan taralayotgan yoqimli isdan mazza qilib rohatlanamiz.

LIPTON BRISK ICED TEA

Ingredients:



2 Lipton tea bags (regular size)
1 cup + 2 table spoons granulated sugar
1/2 teaspoon Kool-Aid lemonade unsweetened drink mix


Instructions:


Bring 2 quarts of water to a boil in a large saucepan. Add the tea bags and remove the pan from the heat. Let the tea steep for at least an hour.



Pour the granulated sugar and Kool-Aid drink mix into a 2 quart pitcher. Add the tea and stir so that the sugar dissolves. Add additional water if necessary to bring the tea to the 2 quart mark on the pither. Chill well before serving.


LIPTON DIET GREEN TEA WITH CITRUS

Ingredients:



4 cups boiling water
2 Lipton green tea bags
2 1/2 teaspoons Equal (10-sinle serving packets)
1 1/4 teaspoons True Lime

аммо анчадан бери кийнаган савол бор... баъзан банкадаги чой устида "чой каймоғи" хосил бўлиб колади... Шу нима экан... ишкилиб зарари йўкмикан...? Биттасидан сўрасам хозирги чойларга "красител" кўшади, шунинг "иши" дегандек бўлди... :cool:

Choyni ichida malum miqdorda qanaqadur modda esimdan chiqdi, simob yoki hullas nmadur bo'ladi. O'sha narsa choy sovugan vaqtta choyni yuzasiga chiqib qoladi.
Sovuq qora choyni ichish judayam zararli jigarga. Iloji boricha miditsinada sovuq qaynatilgan suvni ichish tavsiya qilinadi. Qora choyni achchiq qilib ichish ham jigarga zarari kotta. Mani adajonimni hecham shu narsadan halos qilib bo'lmiyapdi :rolleyes:

Kitayoza aka ko'k choy hammani ham dovleniyasiga to'g'ri kelavermaydi ;)
Birodarlarga maslahatim dog' choy ichinglar, umuman zararsiz va ishonchli :)

Aniq simob edimi bilmayman. Lekin tahminimcha simob. Shuning uchun ham qora choy zararli deyishadi. Yana Alloh biladi. Shuncha odam yashavottiyu qora choy ichib :rolleyes:

Miditsinada ham qora choyni ko'p ichishlikdan qaytarishadi. Jigarni nmalarinidur berkitib qo'yar ekan qora choyni rangidan chiqadigan shilliq narsalari. o'sha shillimshiq narsa asosan o'sha moddadan iborat bo'ladi...
Hullas nma bo'lsa ham o'sha sovuq choy ustidagi parda zararli... Sovuq choyni ichmaslik kere iloji boricha...

Choy tarkibida mana bular (http://www.tea4you.ru/properties1.html)bor ekan, lekin simobni gapirishmapti. Ichida simob (http://ru.wikipedia.org/wiki/%D0%A0%D1%82%D1%83%D1%82%D1%8C)bo'lmasa kerage.. Simob juda zaharliku.

В Узбекистане национальным напитком является зеленый чай, который пьют во всех областях и городах Узбекистана, за исключением Ташкента, где преимущественно употребляют черный чай.

Для приготовления зеленого чая по-узбекски, или кокчая, сухой зеленый чай засыпают в хорошо согретый чайник (фарфоровый), затем слегка заливают кипятком (не более четверти объема чайника) и помещают на 2 минуты в ток горячего воздуха (например в открытую духовку), но не непосредственно на огонь, после чего чайник доливают до половины, покрывают салфеткой, а еще через 2-3 минуты обливают сверху кипятком и доливают до 3/4 объема и затем выдерживают еще 3 минуты и доливают почти доверху.

Наряду с кокчаем у узбеков и особенно в Каракалпакии распространено употребление чая с перцем, медом и молоком, причем в этом случае применяют черный чай.

Чай с перцем (мурч чой). Его готовят как обычный черный чай с добавлением на каждую чайную ложку сухого чая двух горошин черного перца (раздавленных)

Чай с черным перцем и медом (асалли мурч чой). На каждую чайную ложку сухого чая берут 2 чайные ложки меда и 2-3 горошины черного перца. Весь этот состав засыпают в чайник и заваривают как обычно.

choyni damlash usullari esa har hil, aslida sifatsiz choylarda ko'pincha shunday plyonka buladi...uzbekistonda ayniqsa choyga boshqa bir ko'katlarni quritib solib yuborishadi, huddi sutga suv qo'shib sotganday.

keyin choyni damlab termosga quyadigan bulsangiz, oldin choynakka damlab rangini chiqarib olib keyin termosga shamasiz qilib quyib quysangiz o'z rangini o'zgartirmay issiq turaverarkan.

Choynakda damlab ichadiganlarga esa haligi setochkaga o'xshagan narsa buladi choynaklar uchun alohida shunga choyni solib shamasini ajratib olsa ham shunaqa bulmaydi menimcha.

kitayoza aytganlariday, eski(ya'ni ertalabki yoki 4-5 soat turib qolgan) choyni isrof bo'lmasin deb ba'zida ustiga damlaganda ham shunday buladi, yangi choyiz eski bulib turaveradi. Keyin choynak yaxshi chayqalmasa ham shunday, eski choyni aytganizday "plyonkalari" choynak devoriga yopishib qoladi, yangi choy damlasangiz ushalar yuqori ko'tariladi
