Toshkentda Mir ni ichida bir salad bor edi hamma saladlarini ichida faqat o'sha mayonezsiz edi, hamma ingredientlari esimda yoq bilganimcha aytaman brinza, sabvi, bodring,... hammasi solomka qilib kesilgan va olive oil qoshilgandi Agar shu saladni kim to'liq bilsa yozib yuboringlar.. Rahmat

olib qolaman hozir. mana buni egim kevotti. nemetziki ham shuanqa ku, toqrimi. recept bervorila.
Nezabudka,
har hil qisez boladi. mana bir turini retsepti
Paella
Chicken 200 gr
Olive oil
1 Chopped Onion
1 Chopped Garlic clove
Par boiled rice (takes 20 minuts)
1 teaspoon salt
spices (if u want little spicy hot, u can add hot pepper or red pepper sauce or Tabasco sauce)
herbs (cilantro or parsley chopped)
saffron or turmeric (spice orange or yellow makes the rice yellow)
4 cups chicken broth
you can add
1/2 pound fresh mussels and/or clams
shrimp
calamari (squid)
small can of chopped/diced tomatoes
flozen green peas (at least one cup)
In a large pan, brown the chicken in the olive oil. Add chopped onions and garlic, brown (you can add sweet pepper or other veggies too). Add the chicken broth and tomatoes, salt and spices. Bring to a boil. Add the mussels and clams and the rice, simmer until the rice is almost done. Then Dissolve saffron or turmeric to the rice. And add your thawed green peas if desired
If u wanna use shrimp, add them before the rice is done. Cover and simmer until rice is finished (about 20 minutes over a low heat (so the rice on the bottom does not burn). Serve with lemon sections if you want.

Marble Cheesecake

3 tablespoons butter or margarine

1 teaspoon vanilla extract
3 large eggs

Combine graham cracker crumbs, 3 tablespoons sugar, and butter; press onto the bottom of a 9-inch springform cake (http://www.cooksrecipes.com/dessert/marble_cheesecake_recipe.html#) pan. Bake at 350*F (175°C) for 10 minutes.

Add eggs, one at a time, mixing well after each addition. Blend melted baking chocolate into 1 cup of the batter. Bake at 450°F (230°C) for 10 minutes. Reduce the temperature to 250*F and continue baking for 30 minutes. Loosen the cake from the rim of the pan; cool before removing from the pan. Chill.Makes 12 servings.

Oldin ham yupqa haqida fikr almashilgandi "food in pictures" threadida.
Viloyatlarda balkim boshqacha etilsa kerak, aniq bilmiyman.
Yupqa bu hamirdan tayyorlanadi (hamir ham pishirilib olinadimi yo'qmi, qanaqadur quruq bo'ladi, keyin yog' suriladi) va ichiga qovurilgan go'sht, piyoz, sabzi shunaqa qiymalar solinadi. Hamir 4-5 ga buklanadi va har bir buklovda qiyma solinadi.
Hullas esimda bori shu.

Lobar opa, qana qildiz? turishidan trubichka (shirinlikka)ga ohsharkan. lekin somsa debsiz ichidagi goshtli qiyma shekilli.Trubichkani avval qolipiga orab pishirib olib, keyin creamini solardik. buni qande qildiz? birinchi qiymani solvoldizmi yoki hamirini alohida bake qilib, qiymasini alohida pishirib soldizmi? agar qiymani boshidanla sogan bosez qande oradiz?

French Onion Soup
French onion soup is an onion and beef broth based soup with croutons and cheese as toppings. Onion soups have been popular at least as far back as Roman times. They were, throughout history, seen as food for the poor people, as onions were plentiful and easy to grow. The modern version of this soup originates in France in the 17th century, made from dry bread or croutons, beef broth, and caramelized onions. It is often broiled in a ramekin traditionally with gruyere melted on top. The crouton on top is reminiscent of ancient sops.
French onion soup base
The rich flavor of the base is not due just to the broth, but to the caramelized onions. Caramelization, in this case, is the procedure in which the onions are cooked slowly until the melting sugars slightly burn, thus causing browning. This can be accomplished within half an hour, but many chefs and cooks allow for hours of cooking to bring out the complex flavors of the onions' sugars. In the final stages of cooking, cognac or sherry is often used to enhance the caramelized onion flavor and to deglaze the pan.
The base is usually topped with the crouton, which will be very dry and crusty to allow it to withstand lying on the soup surface while baked or broiled with a good melting cheese on top. The soup is then served in the bowl or ramekin in which it was broiled or baked.
Legend has it that the soup was created by King Louis XV of France. Late one night, he discovered he only had onions, butter and champagne at his hunting lodge, so he mixed them together to create the first French onion soup. Alternate stories attribute the creation to King Louis XIV.
The editors of Saveur Magazine comment in their book, "Saveur Cooks Authentic French" that:
An oft-repeated culinary legend not-withstanding, it is extremely unlikely soupe а l'oignon was invented by Louis XIV (who concocted it, according to one story, with champagne!). Nor did the soup necessarily originate in Lyon, despite the fact that the region is famous for its onions (and that dishes cooked а la lyonnaise inevitably contain them). According to Dr. Paul Henry, a respected Lyonnais historian, the origins of the soup are probably quite pedestrian. Until relatively recently in rural France, soup was a staple of every household, kept simmering on the stove and eaten daily, often for breakfast. It was made of anything that was cheap, or grew plentifully in the garden — and the onion certainly qualified. It also had the virtue of being available most of the year — and was one of the more flavorful of vegetables. "The addition of cheese to the soup and its evolution to a 'gratinйe'," adds Henry, "would probably have come from the Savoie, where cheese is often used in cooking.

У меня есть эта книга, как в печатном так и в электронных вариантах, но что-то меня раздирают сомнения по точности рецептов. В видеоролике присутсвует кишмиш, бульоном не заливают, и на сильный огонь под конец готовки по Махмудову что-то нелогично. Мне как-то рассказывали пожилые люди, которые знали личного повара бухарского эмира (он до смерти жил в Бухаре) и по их рассказам рецепт эмирского плова больше соответсвует тому что в видео. Поэтому хотел бы узнать мнение самих бухарцев.

Hey cooks, I really mussles and would love to learn how to cook them. Mussle creamy soup, for example. Or, in general, how to deal with the thing? Rinse thoroughly, just boil and that's it? Or is there any specific procedure, like soaking them for few hours in some special syrop, etc?

Правильно, жигар не надо мариновать. В шашлыке он должен быть сам по себе сочным, типа стейк-медиум.

2 cups of plain yogurt
1 cup of milk
Pinch of dried mint
Salt
You can also add some dried and crushed (powder) plum
Also, if you would like, add some crushed ice
Put all the ingredients in Blender and blend them together. Any type of blender should work.
The other way of making ayran:
2 cups of plain yogurt
1 cup of water (previously boiled and cooled preffered) or you can use sparkling water if you wish
dried rayhon or mint
salt
Put everything in belnder...

I like both :) But the one on top I learnt from Afghan people (Duh deyishadi). It is very rich and when you blend it, comes out bubbly and very light. But I have warn you, birinchi marta ichganimda ozgina qornim og'rigan :D O'rganib ketasiz keyin.

The ayran you are talking about is the second one.

It depends. I would suggest you to try and put those ingredients for a little portion of your ayran. Apples just give ayran a little different taste. It also depends what kind of apples you have in mind, sweet apples will give ayran sweeter taste, sour apples give sour taste. You can put anything in your ayran :) as long as you can tolerate the ingredients and as long as your ayran will not deviate to something else. My husband likes dried and crushed plums in his ayran. So, play with it a litte until you settle for something you really like.

Rice and Mango Dessert
INGREDIENTS (6 servings):
1 1/2 cup sushi rice
2 cans (15 ounces) coconut milk
1/2 teaspoon salt
4 heaped tablespoons sugar (or
to taste)
1 teaspoon vanilla extract
4 tablespoons peach or apricot
jam
2 tablespoon water
4 ripe mangoes
DIRECTIONS:
Put rice in sieve. Rinse rice
under cold water until water
(from rice) runs clear.
Put rice in medium pot.
Add coconut milk.
Add salt.
Stir.
Add sugar.
Add vanilla extract.
Stir well to blend all ingredients.
Cover pot with lid. Bring to boil.
Reduce heat and cook 20 to 25
minutes, or until rice is cooked
through. Stir ocassionally to
prevent rice from sticking to
bottom of pot.
When rice is done, fluff it with
spoon gently. Take lid off. Cool
rice to room temperature.
Another way to cool rice faster is
to transfer it to heat-proof bowl
and leave on counter top until
rice is tepid, stirring often.
While you cool down the rice,
prepare jam sauce:
Put jam in small pot.
Add water.
Dice 2 mangoes and slice
another 2 mangoes
(How to dice a mango):
1. Peel mango with paring knife or
vegetable peeler.
2. Stand peeled mango on its
narrow side. Cut to each side of
the pit, slicing off as much flesh
as possible.
3. Cut each slice into several
strips, crosswise.
4. Turn mango strips and cut into
several chunks, crosswise.
Spread mango dices evenly
among glasses and put them on
bottom of each glass.
Add about 1/2 tablespoon jam
mixture in each glass.
Spread rice evenly among
glasses.
Top rice with mango slice.
Spread the remaining jam sauce
among glasses, on top of mango
slices.
Enjoy!

Nonlarni base ingredientlari va tayyorlash usuli deyarli bir hil boladide, shunga hammasi bir biriga oxshab ketadi.
Bu receptni Angliyada konditerdan organgandim, Celtic shirin nonlar juda keng tarqalgan ekan. Lekin receptni keskin ozgartirib "user friendly" qilganman: tanish bilishlar qiziqib recept sorashadi... pishirganda doim "o'xshab chiqadigan" bolishi uchun o'zgartirishlar kiritganman :)

Сегодня я предоставлю вам рецепт старого азербайджанского печенья - Курабие. Курабие было распространено больше среди жителей Баку. Поэтому его называют курабие бакинское. Его моя бабушка пекла на Новруз, но те, которые можно было найти в "комсомольском магазине" на Торговой (главная прогулочная улица г.Баку), всегда мне казался вкуснее. Повзрослев, поумнев я поняла, что ничто не уступит бабушкиным курабие.
Итак, вам понадобятся (я приведу пол-порции, т.к. их получается много и я всегда делаю пол-порции):
Сливочное масло (не советую с маргарином, вкус не тот) - 175 гр
Сахарнаха пудра - 80 гр
Мука - 300 гр (у меня ушло чуть больше)
яичный белок - половина 1 яйца (около 20 гр получается).
Масло взбейте как следует с сахарной пудрой до однородной массы, затем добавьте белок и тщательно взбейте. В конце просейте муку в массу и продолжайте взбивать до тех пор, как не получится однородная, приятная на ощупь масса. Она мне почему-то напоминает пластелин, который долго держала в руках.
На протвень, устланный бумагой, выдавите "ромашки". (у меня из это порции получилось 35 ромашек). В середину ромашек положите повидло. Положите цвета потемнее, чтобы ярко вырисовывались. Можно и желтого цвета - абрикосовое варенье.
Разогрейте духовку до 250 гр и положите печенья в духовку и пеките около 10 минут. Печенья пекутся очень быстро, поэтому не сводите глаз с печки, иначе у вас курабие сгорят.

Dont know, was just curious of getting fresh shark file and making something on my own. I tasted shark once in a restaurant, but never made anything myself.
Should I just fry it as any other fish, or is there anything else (interesting) to make of it.

PS: any other suggestions regarding catfish, red snapper, smelt, mussels and oysters would be appreciated.

Try simple shark tacos, they're easy to make and best fish tacos out there...
1 cup soy sauce
2 limes, juiced
1 tbsp brown sugar
0.5 tspn cayenne pepper
2 lbs shark
Tacos, to serve
Mix all ingredients together and marinate the shark at least 1 hour. Over medium-high heat grill the shark about 4 minutes on each side or until cooked through, and serve immediately.
You can add other ingredients upon your taste, i.e. garlic, ginger, sesame oil, etc for an Asian twist ;)
I'll be more than happy to assist with seafood and fish recipes. It's my area of expertise and I am passionate about seafood.

Nechta kartoshkaga qancha tuxum, yog' va nachinka ketishi ko'z o'lchamida qivurasiz. :) Kartoshkani qandoq pishirmeng, pyure holiga kelsa bo'ldi.
Receptni adashmasam shu forumdan topgandim:

Надо отварить картошку в мундире (сделала в микроволновке), очистить, пропустить ее через мясорубку. Добавить в картофельную массу яйца, немного сливочного масла (я его растапливаю), соль, специи. Сделать из картофельной массы лепешечки (надо смочить руки водой, тогда это будет легче сделать), внутрь положить начинку. У меня были шампиньоны с жареным луком + чуть сметаны. Dont know, was just curious of getting fresh shark file and making something on my own. I tasted shark once in a restaurant, but never made anything myself.
Should I just fry it as any other fish, or is there anything else (interesting) to make of it.

ingredients
1/4 cup orange juice
3 tablespoons fresh lemon juice
2 tablespoons olive oil
1 1/2 tablespoons chili powder
1/4 teaspoon cayenne pepper
1 1/2 pounds 1-inch-thick shark fillets, cut into 1-inch cubes
1 large orange, peel and pith cut away, cubed
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 tablespoon chopped garlic
1 large serrano or jalapeсo chili, minced
1 large avocado, peeled, pitted, cubed
preparation
Mix orange juice, 2 tablespoons lemon juice, 1 tablespoon olive oil, chili powder and cayenne pepper in large bowl. Add shark; toss to coat. Let stand at room temperature 30 minutes.
Combine orange cubes, onion, cilantro, garlic, chili, remaining 1 tablespoon lemon juice and 1 tablespoon olive oil in medium bowl. Season to taste with salt and pepper. Gently mix in avocado. Let salsa stand up to 1 hour. Preheat broiler. Thread shark on 4 skewers, dividing equally. Broil until just opaque in center, turning occasionally, about 8 minutes. Serve kebabs with salsa.

the following is top notch meatloaf recipe. If you prefer simple meatloaf with easy instructions and a few ingredients, let me know. I will post other recipe.
Top Notch Meatloaf

2 tbsp butter
1 large onion, chopped
1 celery, finely chopped
0.5 red bell pepper, finely chopped
2 tspn minced garlic, plus 1 tspn
1 tspn chopped thyme leaves
1 tspn chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1.5 tspn Dijon mustard
0.5 cup ketchup, plus 1/4 cup
2 tbsp plus 1 tspn Worcestershire sauce
0.5 cup Heavy cream
2/3 cup Breadcrumbs
250 gr ground beef
120 gr sausage (any sausage you like)
120 gr ground veal or lamb
1.5 tspn salt
2 tspn plus 1/4 tspn freshly ground black pepper
2 tspn white or red wine vinegar
0.5 cup tomatoes, chopped or crushed
1. In a large skillet heat the butter over medium-high heat until melted. Add 1/4 cup of the onions, the celery and 2 tbsp of the bell pepper and cook, stirring occasionally, until vegetables are softened, about 6 minutes.
2. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
3. Preheat the oven to 180 degrees C.
4. When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 tspn of the Worcestershire sauce, and heavy cream and mix until thoroughly combined.
5. Add the breadcrumbs, ground beef, sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix.
6. Transfer meat mixture to a 23 by 13 by 8 cm loaf pan and using your hands, form mixture into a loaf shape and set aside.
7. In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining tspn of garlic, remaining 1/2 cup of ketchup, remaining 2 tbsp of Worcestershire sauce, remaining 1/2 tspn of salt, remaining 2 tspn of pepper, vinegar, and tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
8. Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the sauce is slightly caramelized on the top of the meatloaf.
9. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve!
P.S. original recipe contained bacon in it. As we don't eat pork, I had to customize it to my family. If you consume pork, just arrange 4 slices of bacon on top of the meatloaf after completing step 6.

It tasted fine. Kinda dry and not as tender as catfish. I like the latter most.

I'd not recommend you to buy frozen seafood. Freezing is acceptable if there's no other option, but when you cook the seafood, it will release a lot of water and won't taste as good as when fresh. Moreover, fresh fish and seafood contains lots of minerals, vitamins and omega 3 fatty acids which benefit both heart and brain of healthy people.
Buy freshest fish/seafod in the market and cook it the very same day to get the best of it.
If you bought frozen already, try the recipe on the package. Because manufacturer provides with the best appropriate recipe you can prepare with their product.

The following is Rustic Italian Meatloaf recipe. It has the simplest ingredients and very easy to prepare.
2 tbsp olive oil
1 red bell pepper (paprika, bolgarskiy perec), seeded, small diced
1 onion, diced
2 tspn (about 3 cloves) chopped garlic
400-500 gr ground beef
2 eggs
3/4 cup bread crumbs
1 cup grated Parmesan
1 tbsp balsamic vinegar
2 tbsp chopped basil (rayhon) leaves
1 tbsp chopped parsley (petrushka) leaves
1 tspn salt
1/2 tspn black pepper
1 cup red spaghetti sauce
1. Preheat oven to 180 degrees C.
2. Heat 1 tpsn of the olive oil in a saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.
3. When the peppers and onions are cool, combine all of the remaining ingredients together except for the spaghetti sauce.
4. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish.
5. Top with the spaghetti sauce making sure to spread evenly over the top.
6. Bake for approximately 50 to 60 minutes. Remove from the oven and let rest for 5 minutes. Slice and serve.
P.S. original recipe contained 1 tbsp of Worcestershire sauce. I'm not sure if we have this sauce in Tashkent. If you can find it, add 1 tbsp to the mixture. I found homemade Worcestershire sauce (http://homecooking.about.com/od/condimentrecipes/r/blcon85.htm) recipe online, however, it's time consuming IMHO. If you don't have the sauce just skip it ;)

Sorry for interfering your sweet conversation. Shark meat might be indeed very dry when fried, that is because I gave you the recipe in which the meat had to be marinated before grilling. Marinating process is very crucial for some fish if you don't wanna eat dry, chewy, tough meat. Grilling is also important if you care for your health, as it's less fat (low cholesterol) and better taste cooking.
As for the headache followed by eating shark, I think this link (http://www.cnn.com/HEALTH/indepth.food/meat/seafood/shark.mercury/index.html) might help.

Seriously, I had a severe golovokrujeniye after the meat and had to lay in order not to collapse. Walls in the room were spinning around.. :rolleyes: My shark had definitely contained high lvel of mercury. Shall I trash it?

Sorry to hear that hon:( You can substitute parmesan with Asiago, Romano, Grana Padano cheeses. However, I have no idea if they sell in Tashkent...
Just don't put cheese in meatloaf. I don't think it makes a lot difference. As for myself, I'm not a big fan of Parmezan.

I have no idea if dizziness was caused by high level of mercury:( Are feeling better now? May be meat was just strong? If you also felt like vomiting or nausea, the fish might be not fresh.
Look at the date of the article, it is not up-to-date. I'm sure that F.D.A took certain precausions to reduce mercury level in big fish such as tuna, shark and swordfish. I gave you the link just because you should be cautious and not eat shark meat very often.

If you know how to make manty, then it is pretty much the same, just the way you shape it is different.
You make the filling, roll the dough, and instead of cutting it into square shapes, you cut it into long, wide strips with a dough cutter, and fold it and roll it into gul-manty.

Творог пропустить через мясорубку. Яйцо взбить с сахаром, добавить растопленное сливочное масло, соль, ваниль и манку. Всё смешать с творожной массой.
В смазанную маслом и посыпанную панировочными сухарями форму выложить полученную массу, смазать сметаной и сбрызнуть маслом. Выпекать 25-30 мин. при 200' С. В творог можно добавить изюм.

Tvorog bilan margarinni yaxshilab aralashtirasiz qulda va un solib yumshoq hamir qilasiz, qulga yopishmaydigan. Birpas tindirib kichkina zuvalachalar yasiysiz yong'oqdek. Va bittadan yoyib bir tarafini shakarga botirasiz va ikkiga buklaysiz shakarli tomonini ichiga qilib, va yana bir tarafini shakarga botirib yana buklaysiz va ustini ham shakarga botirasiz, va listga terib urta olovda qizarguncha pishirasiz.
Shirin chiqadi hudo hohlasa. Pishirib kurin. Ayniqsa issiqligida yeyishlik. :D

Заварное пирожное (эклеры)
Продукты
1 стакан воды
100 гр. масла или маргарина
щепотка соли
4 яйца
1 стакан муки
Способ приготовления.
1.Довести в кастрюльке воду с маргарином и солью до кипения и засыпать туда стакан муки. Мешать хорошо, пока не образуется комок. Слегка остудить и добавить по одному, хорошо перемешивая, 4 яйца.
2.Выкладывать эклеры ложкой, смоченной в воде. Выпекать на бумаге для выпечки при 180 градусах Цельсия до румяности. Первые 10-15 минут духовку не открывать. Они получаются с небольшой мандарин размером, когда испекутся.

Заварные пирожные со взбитами сливками
Надо:
тесто
- мука 150 г
- сливочное масло (или маргарин, но только сливочный) 130 г
- молоко 250 мл
- 4 яйца (если яйца мелкие, то лучше взять 5)
- по щепотке (1/4 ч. ложки) соли и соды
крем
- сливки 35% 350-370 мл
- сахарная пудра 2 стол. ложки
- сливочно-шоколадная или орехово-шоколадная паста (типа Нутеллы ) 5-6 чайных ложек (ну уж это по вашему желанию )
Готовим:
Сливочное масло порезать кусочками и положить в небольшую кастрюльку (лучше из нержавейки), добавить туда же молоко, соль и довести до кипения. Не забывайте помешивать, чтобы масло разошлось. В это время муку смешать с разрыхлителем и как только молоко закипит, смело высыпать мучную смесь в кастрюльку, огонь выключить и энергично мешать, пока тесто не станет отделяться от стенок кастрюли и сформировываться в рыхлый ком. Переложить этот ком в миску, в которой удобно сбивать миксером и остудить до теплого состояния. Затем вбивать по одному яйца при этом взбивая массу миксером на средней скорости. После вбивания яиц тесто будет тягучим, блестящим и очень липким. Пирожные удобно формовать с помощью кондитерского мешка с насадкой, но при его отсутствии можно это делать с помощью двух ложек: одной набирать, а другой сталкивать. Я делаю пирожные с помощью маленького кондитерского шприца со звездообразной насадкой. Конечно возни с этим больше, но мне очень уж нравится легкая ребристость на готовых эклерах.Печь пирожные примерно 25-30 минут при 200 С. Дверцу первые 20 минут не открывать!!! Готовые эклерчики остудить и начинить. Можно только взбитыми сливками, а можно добавить в пирожное по чуточке шоколадной пасты.

Разбить яйца и дополнительный белок в чашку, слегка взбить вилкой. Для рецепта необходимо полчашки яичной смеси, оэтому если получилось больше - лишнее вылить. Отставить в сторону.
Масло, молоко, воду, сахар и соль довести до кипения в небольшой кастрюле на среднем огне, помешав один-два раза. Когда смесь достигнет полного закипания (масло и сахар должны полностью раствориться) немедленно уберите кастрюлю с плиты и быстро вмесите муку резиновой лопаткой или деревянной ложкой до тех пор пока смесь не станет однородной и начнет отставать от стенок посуды. Верните кастрюлю на плиту и прогрейте смесь на маленьком огне, постоянно помешивая, до тех пор пока смесь станет слегка блестящей и будет слегка похожа на мокрый песок (займет ок. 3 минут). Температура массы будет 80-85С (175Ф).
Теперь массу следует быстро переложить в кухонный комбайн или чашу миксера и перемешать 10 секунд с открытой крышкой чтобы масса слегка остыла. Продолжая взбивать, понемногу, тонкой струйкой введите в тесто яйца.
После того как добавили яйца следует соскрести массу, что осела на стенках чашы миксера и взбивать еше 30 секунд либо пока масса не станет густой, гладкой и липкой.
Готовое тесто переложить в кондитерский мешок и выдавить на выложенный пергаментом противень шарики размером 2-3 см, оставляя ними расстояние в 3 см. Поверхность выдавленного теста можно подровнять мокрой ложкой.
Выпекать в разогретой до 220С (425Ф) в течение 15 минут (не открывать дверь духовки на протяжение этого времени!!!!), затем снизить температуру до 190С (375Ф) и печь пока основы не станут золотисто-коричневого цвета (ок. 8 минут). Наощупь они не должны быть мягкими. Выключите нагрев. Выньте противень из духовки, быстро и аккуратно сделайте сантиметровые надрезы в каждой форме для того чтобы через них мог выйти пар изнутри и верните противень обратно в духовку на 45 минут, оставив дверь приоткрытой (при помощи деревянной лопатки). Переместите основы эклеров на решетку до полного остывания.
Остывшие основы можно хранить:
- при комнатной температуре до 24 часов,
- в морозильной камере, в плотно закрывающемся пакете до 1 месяца.
Перед подачей основы комнатной темперауры следует просушить в духовке 150С (300Ф) в течение 5 минут, замороженные основы просушить при той же температуре 10 минут.
КРЕМ
Разогреть в кастрюле среднего размера с толстым дном Халф н Халф, 4 ст.л. сахара и соль до полукипения, помешивая чтобы растворился сахар.
Тем временем слегка взбить желтки, добавить оставшийся сахар (1 ст.л. + 1ч.л.) и взбивать до растворения сахара (ок. 15 секунд), добавить кукурузный крахмал и взбивать пока масса не станет густой и бледно-желтой (ок. 30 секунд).
Когда молочная смесь начнет закипать понемногу, не прекращая взбивать, тонкой струйкой влить ее в посуду со взбитыми желтками. Перелить получившуюся массу обратно в кастрюлю и прогреть на маленьком огне, продолжая взбивать на низкой скорости пока на поверхности крема не начнут появляться крупные пузыри. Масса будет блестящей и густой. Снять с огня и вбить в крем масло и ваниль. Если в креме образовались комочки - протереть его через сито в среднюю чашу, положить на крем пластиковую пленку (чтобы не формировалась корочка) и поставить в холодильник минимум на 3 часа.
Крем можно хранить в холодильнике до 2х дней.
Наполнять эклеры кремом следует незадолго до подачи на стол. В каждой основе эклера сделать небольшое отверстие и заполнить ее кремом через кондитерский мешок. Готовые эклеры посыпать сахарной пудрой.
Если основы разрезать и положить внутрь маленькие шарики мороженого, закрыть и сверху полить шоколадной глазурью - получатся профитроли.

Мамины эклеры
Эклеры:
маргарин 175 г
1 стак. муки
8 яиц
1 стак. воды
Крем:
масло 400 г
1 банка сгущенки
В кастрюлю налить воды, положить маргарин, посавить на плиту (огонек средний), дать ему растаять. Смесь должна закипеть. Затем в нее всыпать муку (кастрюля все время находится на маленьком огне) вбивать по 1 яйцу и тщательно размешивать.
Тесто должно получиться как густая-густая сметана или как на оладья - тягучее такое.
Если тесто получается жидковатым, то добавьте муки. Муку надо добавлять аккуратно - небольшими порциями, буквально по ложечке, тщательно при этом размешивая.
На горячий противень ложкой разложить тесто. В нагретую до 200-250°С духовку поставить противень. Когда эклеры поднимутся, огонь уменьшить. Всего они пекутся 20-25 мин.
Пока эклеры поднимаются духовку открывать нельзя, но и после этого лишний раз духовку открывать не рекомендуется.
Готовые эклеры снять с противеня, дать им остыть, надрезать, внутрь ложкой положить крем.
Крем: сгущенку и масло взбить миксером.

100гр сливочного масла
250мл воды
180гр муки

Крем:

Масло,воду и соль положить в посуду,поставить на огонь,как вскипит и масло раствориться,
сделать огонь поменьше,положить муку и быстро-быстро перемешать,масса станет однородной,и отойдет от стенок(буквально минуту)
Убрать тесто,немного остудить(а то яйца сваряться!),добавлять по одному яйца,и очень тщательно
перемешивать после каждого(лучше всего пользоваться миксером)
Разогреть духовку на 200гр,
выдавить шприцом эклеры на форму,выпекать в горячей духовке первые 20минут при 200градусах,а
затем еще около 15 мин при температуре 180гр
Первые 20мин дверцу духовки не открывать
Приготовление крема:
крахмал и яйца взбить чтоб не осталось комочков,молоко поставить на огонь,положить сахар,влить тонкой струйкой яично-крахмальную смесь,и перемешивать пока крем не загустеет
Убрать,покрыть пищевой пленкой,остудить
Как остынет,добавить ваниль и взбитые сливки

Tak chto o'zizdan o'ziz hafa bo'men. Uncha munchasi uy sharoitida unaqa baklava pishiraolmaydi.:D

Для ганашa, в маленькой кастрюльке довести до кипения сливки. Снять с огня, залить ими шоколад, дать постоять минуты 3 и размешать деревянной ложкой до полного растворения шоколада. Смесь поставить в холодильник на часов 6, а лучше на ночь, так как сливки взбиваются только в холодном состоянии.
Взбить яичные белки с солью в пену, не переставая взбивать постепенно добавить весь сахар, взбивать до крепких пиков, уменьшить скорость миксера, добавить экстракт ванили и кокосовую стружку, через несколько секунд миксер выключить.
Разогреть духовку до 350F/ 180C.
Застелить 2 противня пергаментной бумагой.
Ложкой выкладывать на приготовленные противни горкой кокосовую массу, пальцем сделать небольшое углубление. Поставить противни в духовку, выпекать печенье в течение ~15 минут, до красивого золотистого цвета. Затем печенье полностью остудить.
Взбить ганаш миксером до густого крема, это займет минуту-две, но надо следить, чтобы не перебить крем, а то он посечется.
Выдавить ганаш из кондитерского мешочка на каждое печенье.
100 г шоколада растворить на водяной бане. Ложкой или вилкой, тоненькой струйкой полить печенье.

Кокосовую стружку смешать со сгущеным молоком. Белки с солью взбить в крутую пену. Аккуратно ввести белки к кокосовой массе. Духовку разогреть до 325Ф. Двумя ложками выложить "тесто" на противень. Выпекать 30-35 минут. Остудить на решетке. Вот и все.

Теперь можно с помощью чайной ложечки делать бугорки и сажать сразу на противень застеленной бумагой. Можно эту массу так же сажать сначало на круглые листочки каторые продаются для печений. А затем уже на противень. Выпекать при 160 С около 15 минут. Они не должны покоричневеть.

Kulinarniy forumlarning birida kop qizlar tomonidan maqtalgan 'Ptich'e moloko" torti recepti bor ekan, shuni pishirib korilachi, ozim hali bu recept boyicha qilib kormaganman, har holda boshqalar tomonidan sinab korilgan recept bo'lgani uchun hukmingizga havola qilyapman:);
"Птичье Молоко"
Тесто:
4 яйца
1 стакан сахара
1 стакан муки
Крем:
1 стакан молока
1,5 стакана сахара
1,5 столовая ложка муки
10 яиц
250-300 грам масла
14 грам желатина
1 чайная ложка экстракта ванили
Корж-как обычно,взбить яйца с сахаром,добавить муку,испечь бисквит.Когда остынет,разрезать вдоль на 2 коржа.
Крем:желатин замочить в 0,5 стакана воды.
Желтки взбить с 3/4 стакана сахара добавить муку ,молоко,и на водяной бане довести до кипения,остудить,накрыв пленкой,для предупреждения образования корочки на поверхности.Хорошо взбить размягченное масло.Взбить остывший крем.Соедининить взбитое масло с кремом,взбить.
10 белков взбить с оставшимися 3/4 стакана песка.Во взбитые белки влить желатин ,и перемешать.Соединить крем и белковую массу.
В разъемную форму уложить корж бисквита,нанести на него начинающий застывать крем,накрыть вторым слоем бисквита.
Верх и бока залить глазурью или растопленным шоколадом.
Глазурь:
6 столовых ложек песка
4 столовых ложек какао
2-3 столовые ложки горячего молока или сливок
100 гр масла
Все перемешать,и на маленьком огне,постоянно помешивая, довести до полного растворения сахара.

кто-нибудь готовил сердце (коровье или баранье)? ;) есть рецепты хорошие? мы были на выходных в аргентинском ресторане, попробовали на первое коровье сердце, было вкусно. хотелось воспроизвести похожее дома, но никаких хороших рецептов найти пока не удалось. посоветуете что-нибудь?
